Cyrano’s Spinach Salad

This recipe is adapted from a favorite restaurant of mine in Bend, Oregon from years ago.

**The amounts you use will depend on how many you are serving. You may just adjust the recipe accordingly.

**4 cups of spinach will serve 4 -6.

In a beautiful bowl combine:

  • 4 cups tender fresh spinach, torn
  • 3 hard boiled eggs, sliced
  • 3 pieces of bacon, crumbled
  • A few red onion slices, optional

Dressing

Mix together in a blender or with a whisk:

  • 2 medium eggs
  • ½ tsp. dry mustard
  • ½ tsp. salt
  • ½ clove fresh garlic
  • 1 ½ Tbl. Sugar or sweetener
  • Juice of ¼ lemon
  • 1 ½ Tbl. Red wine vinegar

Whisk well or blend in blender.

Next, you are going to dribble in SLOWLY, ½ cup olive oil, WHILE you are whisking or running the blender on low. This creates a creamy mixture that will resemble a thin mayonnaise.

Yum!!

When you are ready to serve the salad, toss with the dressing and garnish with sunflower seeds.

Truly this is a meal in and of itself, served with a slice of whole grain bread…. Perfect!
