BAKED GOODIES

Here are a few tips or using healthy substitutions when baking.

  •  I try to use Spelt flour when possible. Spelt is a grain that works a lot like wheat, but does not cause allergy problems like wheat does.

  • When using spelt flour substitute 1/14 cups spelt for every 1 cup of wheat flour.

You can get whole spelt that is similar to whole wheat flour, or you can purchase white spelt flour that works like unbleached flour.

  • When a recipe calls for brown sugar, Sucanat is a great substitute.

Sucanat is a sweetener made from the dried sugar cane juice. It's very high in minerals and has a wonderful rich flavor. It does not cause a big rise and drop in blood sugar like regular sugars do.

  • When a recipe calls for shortening, you may use butter as a healthier choice.

  • Light Olive oil can be used in cooking where ever vegetable oil is called for. OR... it can be used in place of butter or shortening by using 1/3 cup olive oil to every 1/2 of butter or shortening.


HEALTHY GLAZED NUTS

 

  • 11/2 cup Sucanat or brown sugar
  • 2 cups nuts of your choice
  • Dash of salt


Heat a large skillet to medium.
Add the nuts and let toast slightly...stir a little.
Gradually ad the Sucanat or brown sugar, stirring all the while.
Continue to stir until you see the sugar melt and turn to a rather syrupy consistency.


* This is the tricky part... don't let it burn!


 Make sure the nuts are all coated.
Remove to a piece of foil and let cool.

Can be stored for a few weeks, but they probably won't last that long!!

NONI'S DREAM DATES

Make a crumbly mixture of these ingredients:

  • 1 1/2cup white spelt flour
  • 1/4 cup butter
  • 1/4 cup brown sugar

Bake in a 9x9 inch pan for about 15min.or until a light golden brown.

Beat 2 egg whites until stiff and then beat in the following:

  • 1 1/2 cups brown sugar
  • 1/2 tea. baking powder
  • 1/2 tea. salt
  • 2 tbl. flour

Fold in:

  • 1/2 cup raisins
  • 1/2 cup walnuts
  • 1 tea. vanilla

Spread on top of the first mixture and bake about 30 min. Cut when cool into smallish pieces. Very rich!
