Mixed Greens with Raspberries and Honey-Glazed Walnuts

Nuts                                                                                    

Preheat oven to 350°F

Coat a small baking dish with cooking spray.                          

Combine in a small bowl:

·        1 teaspoon olive oil

·        1 teaspoon honey

·        1/4 cup coarsely chopped walnuts or pecans

Spread on baking dish and bake, stirring occasionally, until golden, 10 to 12 minutes. Cool.

 

Dressing

Combine in a blender or food processor:

·        1 tablespoon balsamic vinegar

  • 2 tablespoons olive oil

·        1 tablespoon water

·        1 teaspoon Dijon mustard

·        1 small clove garlic, crushed and peeled

·        1/2 teaspoon honey

·        1/8 teaspoon salt, or to taste

·        Freshly ground pepper to taste

      

     Blend until smooth. Transfer to a small bowl and stir in:

·        2 tablespoons finely chopped shallots

Salad:

·        ½ lb. mixed baby salad greens

·        1 cup raspberries or blackberries

·        1/2 cup crumbled feta cheese

Just before serving, place greens in a large bowl. Toss lightly with the dressing. Top with berries, cheese and nuts. Serve immediately.

This is a lovely and refreshing salad. Make sure you serve this salad in a lovely glass bowl so everyone can see it. May be served on individual salad plates as well.
