Breakfast Crepes

I do believe that this is the all time favorite and really simple. A crepe is simply a very thin pancake. You can cook a batch of these and freeze the extras. This recipe lends itself to any kind of flour. My favorite would be a whole grain Spelt or Barley flour, but to begin with try ½ whole wheat and ½ unbleached flour if your family is not used to eating a lot of whole grains yet.

Stir together with a fork:

  • 1 cup flour
  • 1 cup water
  • 4 eggs
  • Cream cheese
  • Berry jam

Let it set for 5 mins.

These cook fast, so have your cream cheese package open and even go ahead and slice the cheese thinly. Take your jam and add some water to thin it down. Heat it in the microwave or over low heat on the stove.

Heat up a griddle or large skillet to medium high heat. Now, this is the only tricky part. Your griddle needs to be ever so slightly oiled, but too much and the crepe won’t spread out. So what I do at the very start is spray lightly with a cooking spray, then take a paper towel or napkin and wipe it off.

Okay, now for the cooking.

I take a large kitchen spoon, you know the one that is larger than a Tablespoon? Yep, that’s the one. Spoon out onto your cooking surface 2 spoonfuls of the batter and as you do that, take the back of the spoon and spread the batter out into a thin circle.

As soon as it appears dry and shiny on that side flip it over. Put a slice of cream cheese down the center and roll it up. Good job! Now place it on a platter or in a baking dish and keep warm. Continue on with the process until all the crepes are cooked.

To serve, place on plate and spoon the warmed jam on top.

Makes a wonderful Christmas morning breakfast served with fresh fruit and sausage or bacon.

Can be made ahead and kept in the freezer. Just take out of the freezer, thaw for 30 minutes and bake at 350 until warmed.

Christmas Stollen

A German Christmas Bread

Traditionally this bread is made with candies fruit, but this version has natural dried fruits and almonds in it.

In a small sauce pan combine:

  • 1/2 cup milk
  • 1/2 cup butter
  • 1/4 cup honey OR
  • 1/2 cup sugar

Bring this mixture to scalding. Set aside to cool.

In a large bowl combine:

  • 2 pkg. yeast
  • 1/2 cup warm water

Let stand for 5 mins. undisturbed.

Add the milk mixture along with:

  • 1/2 teas. salt
  • 1 teas each almond flavoring and grated lemon peel
  • 3 cups flour

*This recipe works really well with white or whole spelt flour as well as whole wheat flour for a heartier bread

Beat until well blended.

Add 2 eggs, one at a time, beating after each addition.

Gradually stir in:

  • 2 cups flour
  • 1/3 cup chopped dried apricots
  • 1/2 cup each golden raisins, seedless raisins, dried currants or blueberries and slivered almonds

Turn dough onto a floured board and knead until smooth and elastic,( about 10 mins.) adding more flour as needed to prevent sticking.

Place dough in an oiled bowl, cover and let rise until doubled, about 11/2 hours.

Punch dough down and divide in half. on a lightly greased cookie sheet shape each half into a 7 by 9 oval about 3/4 inch thick.

Brush each surface with :

  • 1 egg white beaten with 1 teas. water

Crease dough ovals and fold them over lengthwise with top edge back a bit from bottom edge.

Brush evenly with egg white mixture.

Cover and let rise in a warm place until puffy about 35 mins.

Bake 375 for 25 mins. or until richly browned.

Brush with:

  • 1/4 cup melted butter and sift powdered sugar over it.

Return stollen to oven and bake 3 minutes to set the sugar.

Cool on wire racks.

We like to warm it up before eating by wrapping in foil and heating at 300 for 15 mins. It's also good sliced and toasted and served with butter.... ummm!

This also makes a nice gift and can be made into 4 smaller loaves.
